Production of this product is artistic in nature and the workers find it very enjoyable.
Preparation starts from a room set aside for the portioning of the pre-mix , this room is dust free and air-conditioned. The basic ingredients required for the production of bread is portioned into containers making sure that the ingredients are weighed specifically to recipe formula. Here is the beginning of this product and the quality control.
Stage two of production in Harvest Foods Ltd., is the production floor where the premix is turned into the spiral mixer and flour is added with water, it is mixed slowly for three minutes and fast mixed for another nine minutes after which the dough produced is transferred into the volumetric divider where it is equally divided into one kilogram cuts as it is been divided the cuts are transferred into the molder machine that will mould the dough into the shape of the baking pans for the family loaf size.
The moulded doughs are put into pans to enter into proofing stage where the yeast action is allowed to take place for aeration of the dough before baking, this takes about two hours and thirty minutes. After proofing is observed they are now transferred into the hot oven and left there for the next twenty five to thirty minutes observing the baking temperature not to cause burns but bringing out baked golden colored bread.
Bread baked at this stage are transferred into the cooling room after they are turned from the baking pans. Here they are fanned cool and turned around periodically on their sides for effective uniform cooling, this will be for about five to six hours.
Cool conditioned bread are now taking to the slicing section where they are sliced and packaged with branded nylons and sealed for onward transfer to finished goods store where the sales department takes over.
